Arrived at Newlyn and Plymouth, our Ray Wings are fittingly called so because they belong to the ray species, which has fins so large that they resemble wings. Ray (which is comparable to Skate) wing is tasty, like scallops, and has a distinct, firm consistency attributable to the collagen in the fillet.
This also makes it remarkably moist after cooking, with a pleasant, bouncy texture.
Often cooked simply with brown butter and capers, which complement both the texture and flavour of this unusual cut perfectly.

Due to the collagen in Ray Wings, they may spoil quicker than regular fish. As a result, we will rapidly freeze the fish for prolonged freshness. However, if fresh Ray Wings are obtainable from the morning markets, we will dispatch these instead.
