Sardines are tasty small fish that are full of oil flavour. They’re often inexpensive as they’re caught in large numbers during summer along the Cornish coast. To increase sales, they were renamed ‘Cornish sardines’ instead of ‘pilchards’. This change has greatly benefited the fishing industry.
Sardines are best consumed fresh and are delicious when cooked on a barbecue or grill.
Sardines only require a squeeze of lemon and a twist of black pepper to taste great, but they benefit from acidity to balance their oily taste. You could make a swift salsa verde or a tangy summer fruit compote to serve with them.
