Lemon sole is a type of flatfish, belonging to the flounder family, not the sole family. Despite its name, lemon does not describe the taste of the flesh, which, in fact, doesn’t taste anything like lemon. It is believed that the skin of lemon sole has a texture similar to that of a lemon.
Even though the name is misleading, lemon sole is a delicious fish: the flesh is delicate, light and has a fine flavour. Whole fish fillets can be fried with breadcrumbs and served with tartare sauce for a scrumptious Friday evening meal. Alternatively, they can be pan-fried and paired with seasonal greens for a delicious meal any day of the week.
